Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika (optional)
  • 1 cup long-grain white or brown rice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, searing until golden brown on both sides (5-7 minutes). Remove from skillet.
  2. In the same skillet, sauté onions and garlic until translucent (3-4 minutes).
  3. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  4. Return chicken to the skillet, cover, and simmer on low heat for 20 minutes until cooked through.
  5. Cook rice according to package instructions.
  6. Serve smothered chicken over rice.
