Description

Celebrate the holiday season with these soft and chewy Gingerbread Men Cookies! Packed with warm spices and molasses, these cookies are as delicious as they are fun to decorate.

For the Cookies:

  • 3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract

For Decorating:

  • Royal icing or store-bought icing
  • Edible decorations (sprinkles, candy, etc.)

Instructions

  1. Make the Dough:
    • In a medium bowl, whisk together flour, baking soda, baking powder, spices, and salt.
    • In a large bowl, cream butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla, mixing until combined. Gradually add the dry ingredients, mixing until a soft dough forms.
    • Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 2 hours.
  2. Roll & Cut the Cookies:
    • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
    • Roll out one portion of dough on a lightly floured surface to 1/4-inch thickness. Use gingerbread men cookie cutters to cut shapes and place them on the baking sheets.
    • Repeat with the remaining dough.
  3. Bake:
    • Bake for 8-10 minutes, or until the edges are set but the centers are still soft. Cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  4. Decorate:
    • Once cooled, decorate the cookies with royal icing and edible decorations. Let the icing set before serving.

Notes

  • For crispier cookies, bake for an additional 1-2 minutes.
  • Store in an airtight container for up to one week.
  • Chilling the dough is essential for preventing the cookies from spreading during baking.
