Description

Ingredients

  • 2 cups rhubarb stalks, chopped
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour

  • 1/4 cup unsalted butter, cold and cubed
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine strawberries, rhubarb, sugar, flour, and lemon juice. Toss well and let sit for 10 minutes.
  3. Roll out half of the pie dough to fit a pie dish. Fill with the fruit mixture.
  4. Cover with the second rolled-out dough or create a lattice design.
  5. Bake for 15 minutes at 425°F, then reduce to 350°F (175°C) and bake for an additional 30-35 minutes until bubbly and golden brown.
  6. Allow to cool before serving.
