Description

Stuffed Mini Peppers are a delicious and colorful appetizer or side dish made by filling small, sweet peppers with a savory mixture of cheese, herbs, and spices.   • 1216 mini sweet peppers, halved and seeded
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Olive oil, for drizzling
  • Optional: crumbled bacon or sausage (for added protein)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the mini peppers in half lengthwise and remove the seeds and ribs. Set them aside on a baking sheet lined with parchment paper.
  • In a medium mixing bowl, combine the cream cheese, mozzarella, Parmesan, sour cream, parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
  • Using a spoon, fill each pepper half with the cheese mixture, pressing down gently to ensure it is packed in.
  • Place the stuffed peppers on the prepared baking sheet, drizzle with a small amount of olive oil, and season with a little more salt and pepper if desired.
  • Bake for 15-20 minutes or until the peppers are tender and the cheese filling is golden and bubbly.
  • Optional: Top with crumbled bacon or sausage before serving for an added savory crunch.
  • Allow to cool slightly before serving.
