Description

Indulge in these Tex-Mex Beef Enchiladas, featuring savory ground beef wrapped in soft tortillas and topped with melted cheese—perfect for any occasion!

Ingredients

Scale
  • 1 lb lean ground beef
  • 8 medium-sized corn or flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce (store-bought)
  • 1 medium onion, finely chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 3 garlic cloves, minced
  • 1/2 cup sour cream (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, add oil and sauté the chopped onion until translucent. Add minced garlic and cook for an additional 30 seconds.
  3. Add the ground beef to the skillet and cook until browned; drain excess grease. Stir in cumin and chili powder.
  4. Warm tortillas briefly to make them pliable. Spoon the beef mixture onto each tortilla, roll them up tightly, and place seam-side down in a baking dish.
  5. Pour enchilada sauce generously over the rolled tortillas and sprinkle with cheddar cheese.
  6. Bake uncovered for about 20 minutes or until cheese is bubbly and golden brown.
