Description

Refreshing and zesty, this Tzatziki Chicken Salad combines tender chicken and crunchy cucumbers enveloped in creamy tzatziki dressing—a perfect dish for summer gatherings.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 1 medium cucumber, diced
  • 1 cup full-fat Greek yogurt
  • 2 tbsp fresh dill, finely chopped
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to 375°F (190°C). Season chicken breasts with salt and pepper, then cook until golden brown and fully cooked (about 20 minutes).
  2. While the chicken cools, dice the cucumber into bite-sized pieces.
  3. In a mixing bowl, combine Greek yogurt, minced garlic, chopped dill, lemon juice, olive oil, salt, and pepper. Stir until smooth to create the tzatziki dressing.
  4. Shred or chop the cooled chicken into bite-sized pieces.
  5. In a large bowl, mix shredded chicken with diced cucumber and tzatziki dressing until well combined. Adjust seasoning if necessary.
  6. Serve immediately or chill for 30 minutes to enhance the flavors.
