  • 1 cup dry tiny pastina pasta (stelline stars or acini di pepe)
  • 3 cups cooked shredded chicken breast
  • 6 cups low-sodium chicken broth (or bone broth)
  • 2 medium carrots, sliced
  • 2 ribs celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chopped fresh Italian parsley
  • 3 sprigs fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Extra grated Parmesan and lemon wedges (for serving)

Instructions

  1. Sauté Aromatics: In a Dutch oven over medium heat, heat olive oil. Sauté carrots, celery, onion, and garlic for 5 to 6 minutes until tender.

  2. Simmer Broth & Chicken: Add chicken broth, shredded chicken, thyme sprigs, salt, and pepper. Bring to a boil, then simmer gently for 10 minutes.

  3. Cook Pastina: Discard thyme stems. Stir in dry pastina pasta and simmer uncovered for 6 to 8 minutes until pasta is tender.

  4. Garnish & Serve: Remove from heat and stir in fresh parsley and grated Parmesan. Ladle into bowls and serve hot with crusty sourdough bread!
