- 4 medium Yukon Gold potatoes, diced
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- Trim excess fat from the beef and cube it evenly.
- In a skillet over medium-high heat, sear beef cubes until browned on all sides.
- Prepare vegetables by chopping carrots, potatoes, and onions into chunky pieces.
