Ingredients

Scale
  • 1 cup dried green or yellow split peas
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the veggies: Chop the onion, carrots, and celery into even pieces.
  2. Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onions and cook until translucent. Add garlic and sauté for another minute.
  3. Add split peas and broth: Pour in rinsed split peas and vegetable broth. Bring to a boil while stirring occasionally.
  4. Season and simmer: Add bay leaves and thyme. Reduce heat to low and let simmer for about 45 minutes or until peas are tender.
  5. Blend if desired: Use an immersion blender to puree for a creamier texture or leave some chunks for added texture.
  6. Season and serve: Adjust seasoning with salt and pepper before serving hot with crusty bread.
