Ingredients
- 4 medium starchy potatoes (about 800g), peeled and cubed

- 1 cup grated Parmesan cheese (100g)
- 1 large egg, beaten
- 1 cup panko breadcrumbs (100g)
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Boil the cubed potatoes in salted water for 15-20 minutes until tender. Drain and return to pot.
- Mash the potatoes while warm; mix in garlic and butter until smooth.
- Stir in Parmesan cheese, parsley, salt, pepper, and the beaten egg until well combined.
- Using wet hands, form the mixture into golf ball-sized pops and place on a parchment-lined baking sheet.
- Roll each pop in panko breadcrumbs until fully coated.
- Preheat oven to 400°F (200°C) and bake for 25-30 minutes until golden brown.
