  • 1 cup panko breadcrumbs (or plain breadcrumbs)
  • 2 large eggs, lightly beaten
  • 3 green onions (scallions), thinly sliced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 23 tablespoons olive oil (for pan-frying)

Instructions

  1. Prepare the Salmon: Flake the cooked or canned salmon in a large mixing bowl using a fork, ensuring all excess liquid is drained.

  2. Mix Ingredients: Add panko breadcrumbs, beaten eggs, chopped parsley, green onions, lemon juice, salt, and pepper. Stir gently until evenly combined and the mixture holds together.

  3. Shape & Chill: Form the mixture into 8 compact round patties (about 2.5 to 3 inches wide). Place on a tray and chill in the refrigerator for 15 minutes to firm up.
