- 2 large eggs, lightly beaten

- 1/4 cup fresh parsley, finely chopped
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly cracked black pepper
- 2–3 tablespoons olive oil (for pan-frying)
Instructions
- Prepare the Salmon: Flake the cooked or canned salmon in a large mixing bowl using a fork, ensuring all excess liquid is drained.

- Mix Ingredients: Add panko breadcrumbs, beaten eggs, chopped parsley, green onions, lemon juice, salt, and pepper. Stir gently until evenly combined and the mixture holds together.

- Shape & Chill: Form the mixture into 8 compact round patties (about 2.5 to 3 inches wide). Place on a tray and chill in the refrigerator for 15 minutes to firm up.

- Pan-Fry to Golden Perfection: Heat olive oil in a large skillet over medium heat. Fry patties for 3 to 4 minutes per side until deeply golden brown and crispy.

- Drain & Serve: Transfer to paper towels to drain excess oil. Serve warm with your favorite creamy remoulade sauce or fresh lemon wedges!
