  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper (mixed colors), diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, pitted and sliced
  • 3/4 cup feta cheese, crumbled
  • 1/2 cup Italian dressing (homemade or store-bought)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. Dice the cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces.
  3. In a large bowl, combine cooled pasta with chopped veggies and black olives. Toss gently.
