  • 1 cup queso blanco (store-bought or homemade)
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ¼ cup fresh cilantro, chopped (optional)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping bell peppers and onions, and cutting the steak into bite-sized cubes.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak cubes, seasoning with salt, pepper, cumin, and chili powder; cook until browned (5-7 minutes).
  3. Remove steak and sauté onions and bell peppers in the same skillet until softened (4-5 minutes).
  4. Stir in cooked rice to absorb flavors (2-3 minutes).
  5. Pour queso blanco over the rice mixture; stir gently until evenly coated and heated through (about 2 minutes).
  6. Remove from heat; squeeze lime juice over the dish and garnish with cilantro before serving.
