  • 2 ears of fresh corn, kernels removed (about 2 cups)
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup mayonnaise
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/4 cup finely diced red onion
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Marinate the chicken by combining lime juice, chili powder, and cumin in a bowl. Add the chicken breasts and let them soak for at least 30 minutes.
  2. Grill the marinated chicken on medium-high heat for 6-7 minutes per side until golden brown and cooked through.
  3. While the chicken grills, roast corn in a skillet until slightly charred.
