  • 2 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp ground cumin
  • 1 bay leaf
  • Optional: ½ cup diced carrots or peas

Instructions

  1. In a large skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent (3-4 minutes).
  2. Stir in minced garlic, cumin, and bay leaf; cook for 1 additional minute.
  3. Add the rice, stirring to coat each grain with butter. Toast for 2-3 minutes until slightly golden.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until all liquid is absorbed.
  5. Remove from heat and let sit covered for another 5 minutes. Fluff with a fork before serving.
