- 1 cup cooked brown rice
- 1 can (15 oz) black beans, rinsed
- 1 cup bell peppers, chopped
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or canned)
- 2 tbsp taco seasoning
- 1 cup shredded sharp cheddar cheese
- 1 ripe avocado, diced
- ½ cup sour cream or Greek yogurt
- Fresh cilantro, chopped (optional)
Instructions
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Stir in taco seasoning and ¼ cup of water. Let it simmer for 3-5 minutes until thickened.
- Cook brown rice according to package instructions if not using leftovers.
- In serving bowls, layer rice, black beans, sautéed beef, bell peppers, tomatoes, and corn.
- Top with cheese, avocado, sour cream or yogurt, and cilantro if desired.
