Description

Mediterranean Steak Bowls are a vibrant and flavorful dish that combines perfectly grilled flank steak with fluffy couscous and fresh vegetables. This recipe is not only a feast for the senses but also a delightful way to create memorable moments with loved ones. Easy to prepare and customizable, these bowls are perfect for any occasion, from casual dinners to festive gatherings.

Ingredients

Scale
  • 1 lb flank steak
  • 1 cup couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp lemon juice (fresh)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Steak: In a bowl, whisk together olive oil, lemon juice, salt, pepper, and garlic. Add flank steak and coat evenly. Let marinate for at least 30 minutes.
  2. Cook the Couscous: Boil water in a saucepan; add couscous, cover, remove from heat, and let sit for 5 minutes.
  3. Sear the Steak: Heat grill or skillet over medium-high heat. Sear marinated steak for about 4-5 minutes per side until desired doneness.
  4. Chop Veggies: While the steak rests, chop cherry tomatoes, cucumber, and red onion into bite-sized pieces; mix in a bowl and sprinkle with feta cheese.
  5. Assemble Bowls: Fluff couscous with a fork; divide into serving bowls. Top each with sliced steak and chopped veggies.
  6. Drizzle & Serve: Finish each bowl with additional lemon juice and olive oil before serving.
