- 3 cups peeled and diced Yukon Gold potatoes
- 2 medium carrots, sliced
- 2 ribs celery, diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (with juices)
- 2 tablespoons tomato paste
- 5 cups low-sodium beef broth
- 1 cup frozen green peas
- 1 tablespoon Worcestershire sauce
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 dried bay leaf
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Fresh chopped parsley (for garnish)
Instructions
- Brown Ground Beef: In a Dutch oven over medium-high heat, heat olive oil. Add ground beef and crumble for 5 to 6 minutes until browned. Drain excess fat.

- Sauté Vegetables: Add diced potatoes, carrots, celery, onion, and garlic. Sauté for 3 to 4 minutes until fragrant.

- Simmer Broth & Veggies: Stir in tomato paste, Worcestershire sauce, diced tomatoes, beef broth, Italian seasoning, and bay leaf. Bring to a boil, cover, and simmer for 15 minutes until potatoes are tender. Stir in peas during last 3 minutes.

- Ladle & Garnish: Remove bay leaf. Season with salt and pepper. Ladle into bowls, sprinkle with fresh parsley, and serve with crusty sourdough bread!
