  • 1 medium sweet onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 medium carrots, sliced thinly
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp tomato paste
  • 1 cup chicken broth (low-sodium)
  • 2 tsp fresh thyme
  • ½ tsp pimento (allspice)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables into bite-sized pieces.
  2. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper; sear until golden brown on both sides (about 5-7 minutes per side). Remove from skillet.
  3. In the same skillet, sauté onions until translucent (3-4 minutes). Add garlic, bell peppers, carrots, thyme, pimento, tomato paste, soy sauce, and chicken broth; cook for an additional 5 minutes.
  4. Return seared chicken to the skillet. Lower heat to medium-low, cover, and simmer for about 30-40 minutes until chicken is tender.
