  • 4 medium Yukon Gold or Russet potatoes, peeled and sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream (full-fat)
  • 1 small onion, chopped
  • 4 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice the potatoes into thin rounds.
  3. In a skillet, melt 2 tablespoons of butter over medium heat; sauté onions until translucent (about 5 minutes).
  4. In a large bowl, combine sliced potatoes, sautéed onions, sour cream, garlic powder, salt, pepper, and half of each cheese. Mix well.
  5. Grease a 9×13 inch baking dish. Layer half of the potato mixture followed by half of the remaining cheese; repeat the layers.
  6. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake an additional 20-25 minutes until bubbly and golden brown.
