Ingredients
Scale
- 4 medium Russet potatoes (about 2 lbs)
- 1 lb lean ground beef or turkey
- 2 tbsp taco seasoning
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup chopped green onions
Instructions
- Preheat oven to 400°F (200°C). Scrub the russet potatoes and poke holes in each with a fork.
- Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat and stir in taco seasoning with water as per package instructions.
- Once baked, slice the potatoes in half and scoop out some flesh into a bowl, leaving enough potato to maintain the skin's structure.
- Combine the scooped potato flesh with cooked meat, half of the shredded cheese, and sour cream. Mix well.
- Fill each potato skin with the mixture, top with remaining cheese, and bake for an additional 10-15 minutes until golden brown.
