- 4 to 6 bone-in, skin-on chicken thighs
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup low-sodium chicken broth
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 1/2 tbsp yellow curry powder
- 1 tbsp olive oil
- 1 lime, juiced & sliced for serving
- 1/4 cup fresh cilantro, chopped
- 1 fresh red chili, sliced (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Sear chicken: Season thighs and sear skin-side down in olive oil for 6-8 min until golden brown and crispy. Set aside.

- Sauté aromatics: Cook onion, garlic, ginger, and curry powder in pan drippings for 3 min until fragrant.
