- 1 cup cranberry sauce (homemade or store-bought)
- 4–6 garlic cloves, minced
- 1 large onion, thinly sliced
- 2 tbsp olive oil (extra virgin)
- Salt and pepper to taste
- 2 tsp fresh thyme leaves
- 1 tbsp balsamic vinegar
- 1 cup beef broth
Instructions
- Preheat oven to 325°F (163°C). Pat the beef roast dry and season generously with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Remove the roast and add sliced onions and minced garlic to the skillet. Sauté until softened, about 3-4 minutes.
- Stir in cranberry sauce, balsamic vinegar, thyme, and beef broth until well combined. Bring to a simmer before returning the roast to the skillet.
- Cover with foil or a lid and transfer to the oven. Roast for 2-2.5 hours or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Let the roast rest covered for 15-20 minutes before slicing against the grain.
