  • 1.5 lbs boneless skinless chicken breasts or thighs, diced
  • 3 cups peeled and diced Yukon Gold potatoes
  • 2 medium carrots, sliced
  • 2 ribs celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup frozen green peas
  • 3 tablespoons unsalted butter (divided)
  • 3 tablespoons all-purpose flour
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons chopped fresh Italian parsley
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Sear Chicken: In a Dutch oven over medium-high heat, melt 1 tbsp butter. Sear diced chicken for 5 to 6 minutes until golden. Transfer chicken to a plate.

  2. Sauté Vegetables: Melt remaining 2 tbsp butter. Sauté potatoes, carrots, celery, onion, and garlic for 4 to 5 minutes. Stir in flour for 1 minute to coat.

  3. Simmer & Add Cream: Pour in chicken broth, add seared chicken and thyme. Bring to a boil, cover, and simmer for 15 minutes until potatoes are tender. Stir in heavy cream and peas, simmering for 3 more minutes.

  4. Ladle & Serve: Season with salt and pepper. Ladle into bowls, garnish with fresh parsley, and serve hot with crusty sourdough bread!
