  • 1 cup diced bell peppers (red and yellow)
  • 1 cup diced cucumber
  • 2 green onions, thinly sliced
  • ½ cup fresh cilantro, chopped (or parsley)
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup crispy chickpeas (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the cooked jasmine rice on a baking tray and bake for about 15 minutes until crispy and golden brown.
  2. While the rice is baking, chop the bell peppers and cucumber into bite-sized pieces. In a large mixing bowl, combine them with green onions and cilantro.
  3. Once the rice has cooled slightly, add it to the vegetable mix.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad mixture and toss well.
  5. If using crispy chickpeas, sprinkle them on top just before serving for added crunch. Serve immediately or chill in the refrigerator.
