- 3 lbs pork shoulder, cut into large chunks
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp dried oregano
- 2 bay leaves
- 1/2 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lime juice
- Salt and pepper to taste
- 1 cup chicken broth (or water)
Instructions
- Trim excess fat from the pork shoulder and cut it into large chunks.
- Place chopped onion and minced garlic at the bottom of the crockpot.
- Season the meat generously with cumin, oregano, salt, and pepper.
- Pour orange juice and lime juice over the meat.
- Add chicken broth until it covers half of the meat; add bay leaves.
- Cover and cook on low for 8 hours or high for 4 hours until fork-tender.
- Once cooked, shred the meat using two forks and serve with warm tortillas or over rice.
