  • 2 lbs lean ground beef (85/15 or 90/10)
  • 1 packet (1 oz) French onion soup mix
  • 2 large yellow onions, thinly sliced and caramelized in 2 tbsp butter
  • 3/4 cup Panko breadcrumbs
  • 1 large egg, beaten
  • 1/3 cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium beef broth
  • 6 slices Swiss cheese (or 1.5 cups shredded Gruyère)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Caramelize Onions & Mix Meatloaf: Sauté sliced onions in butter until golden (reserve half for topping). Gently mix ground beef, breadcrumbs, egg, milk, half of caramelized onions, soup mix, Worcestershire, garlic, thyme, salt, and pepper in a bowl.

  2. Shape & Slow Cook: Make a foil sling in slow cooker. Add broth to bottom. Shape meat into oval loaf on top of foil. Cover and cook on LOW for 5 to 6 hours (or HIGH for 3 hours) until 160°F.

  3. Top with Cheese & Melt: Top hot meatloaf with reserved caramelized onions and Swiss/Gruyère cheese. Cover for 10 minutes until cheese melts bubbly.

  4. Slice & Serve with Gravy: Lift meatloaf using foil sling. Thicken crockpot juices into onion gravy. Slice meatloaf, ladle gravy over top, and serve with mashed potatoes!
