Ingredients

Scale
  • 1.5 lbs 80/20 ground beef
  • 2 large onions, thinly sliced
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 cup low-sodium beef broth
  • 1 cup Swiss cheese, sliced
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Caramelize Onions: In a skillet over medium heat, sauté sliced onions in a drizzle of olive oil until golden brown (about 15 minutes).
  2. Mix Ingredients: In a large bowl, combine ground beef, breadcrumbs, eggs, caramelized onions, thyme, garlic powder, salt, and pepper. Mix gently.
  3. Shape Meatloaf: Form the mixture into a loaf shape and place it in your crockpot. Optionally line the crockpot with parchment paper for easier removal.
  4. Add Broth: Pour low-sodium beef broth around the meatloaf without fully covering it.
  5. Top with Cheese: Lay slices of Swiss cheese generously on top.
  6. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the internal temperature reaches 160°F (70°C).
