- 1 cup quinoa
- 1 red bell pepper, diced
- 1 cucumber, chopped
- 1 carrot, grated
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime (about 2 tablespoons)
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons natural peanut butter
- 1 tablespoon honey or agave syrup
- Optional: Sriracha sauce to taste
Instructions
- Rinse quinoa under cold water until clear.
- Cook quinoa in a medium saucepan with 2 cups of water; bring to a boil, then cover and simmer for about 15 minutes until water is absorbed.
- While cooking, dice bell pepper and cucumber, and grate the carrot.
- In a small bowl, whisk together soy sauce, lime juice, peanut butter, honey/agave syrup, and optional sriracha.
- Fluff cooked quinoa with a fork in a large bowl; add chopped vegetables and cilantro. Pour dressing over and mix until evenly coated.
- Chill in the fridge for at least 30 minutes before serving.
