  • 3 tbsp low-sodium soy sauce
  • 2 tsp Sriracha or chili paste (adjust to taste)
  • 1 tbsp brown sugar
  • 1 tbsp fresh lime juice
  • 2 tbsp cooking oil

Instructions

  1. Prepare all ingredients by chopping vegetables and slicing protein.
  2. Boil water and cook rice noodles according to package instructions until al dente, then drain.
  3. In a large skillet or wok over medium heat, add oil and sauté minced garlic until fragrant (about 30 seconds).
  4. Add sliced chicken or tofu and cook until browned (5-7 minutes).
  5. Stir in chopped vegetables and sauté until slightly softened (3-4 minutes).
  6. Return cooked noodles to the skillet; add soy sauce, Sriracha, brown sugar, and lime juice. Stir-fry for an additional 2-3 minutes until well combined.
