- 4 dried guajillo chiles

- 12 small corn tortillas
- Salt and pepper to taste
Instructions
- Trim excess fat from the chuck roast and season with salt and pepper. Sear in a hot pot until browned on all sides.
- Toast guajillo chiles in a dry skillet until fragrant, then soak in hot water for 15 minutes. Blend with garlic, onion, bay leaves, and some soaking liquid until smooth.
