  • 3/4 cup (150g) granulated sugar (plus 1 tablespoon for topping)
  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 2 tablespoons dark rum (or spiced rum / apple cider)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon fresh lemon juice
  • Salted caramel sauce and chantilly whipped cream (for serving)

Instructions

  1. Prep Apples: Preheat oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper. Peel and dice apples into chunks, tossing with lemon juice in a bowl.

  2. Whisk Batter: Whisk eggs and sugar for 1 to 2 minutes until pale and frothy. Whisk in dark rum, vanilla, melted butter, flour, baking powder, and salt until smooth.

  3. Fold Apples & Fill Pan: Fold diced apples into the batter until coated. Transfer to pan, smooth top, and sprinkle with 1 tbsp sugar.
