  • 1.5 cups shredded Gruyère cheese (or Swiss)
  • 1 cup shredded mozzarella cheese
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Caramelize Onions: Melt butter and 1 tbsp olive oil in a skillet over medium heat. Add sliced onions, thyme, and a pinch of salt. Cook slowly for 20 to 25 minutes, stirring occasionally, until deeply golden brown and caramelized.

  2. Sear Chicken: Preheat oven to 375°F (190°C). Season chicken with salt, pepper, and garlic powder. In the same skillet over medium-high heat, sear chicken for 3 to 4 minutes per side until golden brown. Remove from heat.

  3. Assemble Casserole: Spread caramelized onions across the bottom of a baking dish. Place seared chicken breasts on top. Pour beef broth and Worcestershire sauce around the chicken. Top each breast with shredded Gruyère and mozzarella cheese.
