  • 4 tbsp unsalted butter, divided
  • 4 cloves fresh garlic, minced
  • 1 lb baby Yukon Gold potatoes, quartered
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss quartered potatoes in olive oil, salt, and pepper; spread on the baking sheet.
  3. Roast for 25-30 minutes, flipping halfway through until golden brown.
  4. In a skillet over medium-high heat, melt half of the butter and sear steak cubes until browned (3-4 minutes).
  5. Remove steak from skillet; reduce heat and sauté minced garlic in remaining butter until fragrant.
  6. Return steak to skillet and toss with garlic butter; garnish with parsley.
