- 3–4 lbs beef chuck roast
- 10 cloves garlic, minced
- 1/2 cup white miso paste
- 1/4 cup low-sodium soy sauce
- 2 cups vegetable broth
- 2 large yellow onions, chopped
- 4 large carrots, sliced thickly
- 1 tbsp fresh ginger, grated
- 1 tbsp sesame oil
- Freshly cracked black pepper to taste
Instructions
- Preheat oven to 300°F (150°C). Chop vegetables into bite-sized pieces.
- In a large Dutch oven, heat oil over medium-high heat. Sear beef on all sides until golden brown (3-4 minutes per side).
- Add onions and garlic; cook until onions soften (about 5 minutes).
- In a bowl, whisk together miso paste, soy sauce, vegetable broth, ginger, and sesame oil. Pour over meat.
- Nestle carrots around the roast. Cover and transfer to the oven.
- Braise for 3-4 hours or until meat is tender and shreds easily.
