  • 1 tsp cinnamon

  • ½ cup unsalted butter (softened)
  • 1 cup dark brown sugar
  • 1 large egg (room temperature)
  • ⅓ cup molasses (unsulfured)
  • 4 oz cream cheese (softened)
  • 2 cups powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, cream together the softened butter and dark brown sugar until fluffy. Add the egg and molasses, mixing until combined.
  3. In another bowl, whisk together the flour, baking soda, ground ginger, cinnamon, and salt. Gradually add this dry mix to the wet ingredients until just combined.
  4. Scoop rounded tablespoons of dough onto prepared sheets about 2 inches apart. Bake for 10-12 minutes until edges are firm but centers are soft.
  5. Allow cookies to cool on wire racks completely.
  6. Beat softened cream cheese with powdered sugar and vanilla until smooth for the filling.
  7. Spread or pipe cream cheese filling onto the flat side of one cookie and top it with another cookie to form a sandwich.
