- 2 cups powdered sugar (sifted)

Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, cream together the softened butter and dark brown sugar until fluffy. Add the egg and molasses, mixing until combined.
- In another bowl, whisk together the flour, baking soda, ground ginger, cinnamon, and salt. Gradually add this dry mix to the wet ingredients until just combined.
- Scoop rounded tablespoons of dough onto prepared sheets about 2 inches apart. Bake for 10-12 minutes until edges are firm but centers are soft.
- Allow cookies to cool on wire racks completely.
- Beat softened cream cheese with powdered sugar and vanilla until smooth for the filling.
- Spread or pipe cream cheese filling onto the flat side of one cookie and top it with another cookie to form a sandwich.
