- 2 cups fresh spinach (or 1 cup frozen)
- 2 tsp dried oregano
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
- Pat chicken breasts dry; season both sides with salt, pepper, and oregano.
- In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant, about 1 minute. Add cherry tomatoes and cook until they start to burst.
- Stir in spinach and Kalamata olives until wilted; remove from heat.
- Arrange seasoned chicken in the baking dish and pour the tomato-spinach mixture on top. Sprinkle crumbled feta generously over everything.
