  • 2 Cornish hens (12 lbs each)
  • 4 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh rosemary (chopped)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika

Instructions

  1. Preheat your grill to medium heat (350°F or 175°C).
  2. In a bowl, whisk together olive oil, garlic, lemon juice, thyme, rosemary, salt, pepper, and paprika.
  3. Pat the Cornish hens dry and place them in a resealable bag or dish. Pour the marinade over the hens and coat well. Refrigerate for at least 30 minutes or overnight.
  4. Grill the hens breast-side down for about 20 minutes until grill marks form. Flip and grill for another 20-30 minutes until the internal temperature reaches 165°F.
  5. Remove from grill and let rest for 10 minutes before serving.
