  • 3 cups cooked jasmine rice (preferably day-old)
  • 1 cup cooked chicken or shrimp, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup bell peppers, diced (mixed colors)
  • 4 green onions, sliced thin
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced

Instructions

  1. Prepare your ingredients by chopping vegetables, mincing garlic and ginger, and dicing protein.
  2. Heat sesame oil in a large skillet over medium heat; add garlic and ginger until fragrant (about 30 seconds).
  3. Add bell peppers and sauté for 3–4 minutes until slightly softened.
  4. Stir in the cooked rice, breaking up clumps and allowing it to crisp for about 2–3 minutes.
  5. Fold in the chicken or shrimp and pineapple chunks; drizzle soy sauce over the mixture and stir well for another 2–3 minutes.
  6. Push ingredients to one side of the skillet, crack in the eggs on the empty side, scramble until set, then mix everything together.
  7. Garnish with green onions before serving.
