- 1 cup jasmine or basmati rice
- 1 cup fresh corn (cut from the cob)
- 3 cloves garlic (minced)
- 1/4 cup honey
- 2 tbsp low-sodium soy sauce
- 2 tbsp olive oil
- 2 green onions (chopped)
Instructions
- Rinse rice under cold water until clear. In a pot, combine rice with 2 cups of water, bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until fluffy.
- While rice cooks, pat shrimp dry and set aside.
- In a bowl, whisk together garlic, honey, soy sauce, and sesame oil; set aside.
- Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until pink and opaque. Remove from skillet.
- Add corn to the skillet and sauté for 2-3 minutes until heated through.
- Return shrimp to the skillet with the sauce mixture; stir gently to coat and simmer for another minute.
- Fluff cooked rice with a fork, serve in bowls topped with shrimp mixture and garnish with green onions.
