Indulge in the vibrant flavors of this Honey Garlic Shrimp and Corn Rice Bowl. Tender shrimp glisten in a sweet and savory honey garlic sauce, served over fluffy rice infused with fresh summer corn. This dish is not only easy to prepare but also a feast for the eyes and palate, making it perfect for any occasion—from cozy weeknight dinners to lively summer barbecues.

Ingredients

Scale
  • 1 lb large shrimp (peeled and deveined)
  • 1 cup jasmine or basmati rice
  • 1 cup fresh corn (cut from the cob)
  • 3 cloves garlic (minced)
  • 1/4 cup honey
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 green onions (chopped)

Instructions

  1. Rinse rice under cold water until clear. In a pot, combine rice with 2 cups of water, bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until fluffy.
  2. While rice cooks, pat shrimp dry and set aside.
  3. In a bowl, whisk together garlic, honey, soy sauce, and sesame oil; set aside.
  4. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until pink and opaque. Remove from skillet.
  5. Add corn to the skillet and sauté for 2-3 minutes until heated through.
  6. Return shrimp to the skillet with the sauce mixture; stir gently to coat and simmer for another minute.
  7. Fluff cooked rice with a fork, serve in bowls topped with shrimp mixture and garnish with green onions.
