  • 3/4 cup super-fine blanched almond flour
  • 1/2 cup finely grated Parmesan cheese (plus extra for garnish)
  • 2 large eggs, beaten
  • 1 cup low-carb marinara sauce (no added sugar)
  • 1.5 cups shredded or sliced mozzarella cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil (for pan-frying)
  • 2 tablespoons chopped fresh basil (for garnish)

Instructions

  1. Bread the Chicken: In a shallow dish, combine almond flour, grated Parmesan, Italian seasoning, garlic powder, salt, and pepper. In a second bowl, beat eggs. Dip chicken cutlets into egg, then press into almond-parmesan mixture until well coated.
