- 2 tsp lemon zest
- Cream Cheese Swirl:
- 8 oz cream cheese, softened
- 3 tbsp sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- Make the batter: Whisk together flour, sugar, baking powder, and salt. In another bowl, whisk eggs, melted butter, milk, lemon juice, and zest. Fold wet into dry until just combined.

- Fill muffin cups: Scoop batter into each cup, filling about halfway.

- Make cream cheese swirl: Beat cream cheese, sugar, and vanilla until smooth. Drop a heaping teaspoon on each muffin. Swirl gently with a toothpick.

- Bake 18–22 minutes until golden and domed. Cool 5 minutes in pan.
