  • 1 cup heavy cream
  • 2 tbsp garlic (minced)
  • 2 tbsp shallots (finely diced)
  • 1/4 cup dry white wine
  • 1/2 cup Parmesan cheese (freshly grated)
  • 2 tbsp fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Create the Pasta Dough: Mix flour and eggs until combined. Knead for 8-10 minutes until smooth. Rest covered for 30 minutes.
  2. Prepare the Filling: Sauté shallots and garlic in olive oil until fragrant. Add lobster meat; cook through. Let cool.
  3. Roll Out the Pasta: Divide dough into quarters; roll thinly using a pasta machine. Cut into squares.
  4. Assemble the Ravioli: Place lobster filling on half of pasta squares, brush edges with water, fold over, and seal.
  5. Make the Sauce: Melt butter in a saucepan, add shallots and garlic until fragrant. Pour in wine; simmer until reduced by half. Stir in cream and Parmesan until smooth.
  6. Cook Ravioli: Boil salted water; add ravioli and cook until they float (about 3-4 minutes). Drain carefully.
  7. Serve: Plate ravioli topped with sauce, garnished with parsley.
