  • 1/2 cup unsalted butter (cold, cubed)
  • 1/4 cup granulated sugar
  • 1 cup pecans (chopped)
  • 2 large eggs
  • 3/4 cup light corn syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in cold butter until crumbly.
  3. Press dough into mini muffin tins evenly across the bottom and up the sides.
  4. Bake tart shells for 10-12 minutes until golden brown.
  5. In another bowl, whisk together eggs, corn syrup, sugar, vanilla extract, and salt until smooth. Stir in toasted pecans.
  6. Pour filling into pre-baked shells until nearly full.
  7. Bake again for 15-20 minutes until set. Allow to cool slightly before serving.
