  • 1 pre-made pie crust (or homemade)
  • 1 cup canned pumpkin puree (100% pure)
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ginger powder
  • ¼ tsp salt

Instructions

  1. Preheat oven to 375°F (190°C). Roll out the pie crust and cut into circles to fit mini muffin tins, pressing them gently into each tin.
  2. In a mixing bowl, combine pumpkin puree, sweetened condensed milk, eggs, cinnamon, nutmeg, ginger powder, and salt; mix until smooth.
  3. Fill each crust about three-quarters full with the pumpkin mixture.
  4. Bake for 20–25 minutes or until a toothpick inserted comes out clean.
  5. Allow cooling in the pan for 10 minutes before transferring to a wire rack. Serve warm or cold with whipped cream.
