Ingredients

  • 4 skin-on salmon fillets (6 oz each)
  • 3 tbsp white miso paste
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 green onions (sliced)
  • 2 cups cooked rice or quinoa

Instructions

  1. In a bowl, mix miso paste, soy sauce, honey, rice vinegar, and sesame oil until combined.
  2. Place salmon fillets in a shallow dish and pour half of the marinade over them. Marinate in the fridge for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C) or prepare your grill.
  4. Cook marinated salmon on a lined baking sheet or grill for 12-15 minutes until flaky.
  5. While cooking, prepare rice or quinoa as per package instructions.
  6. Assemble bowls with rice/quinoa topped with salmon and green onions.
