Description

Pasta carbonara is the ultimate comfort food, featuring al dente spaghetti enveloped in a creamy sauce enriched with crispy pancetta and freshly grated Parmesan. This classic Italian dish comes together quickly, making it perfect for both casual weeknight dinners and special occasions. With its rich flavors and satisfying texture, it’s no wonder that pasta carbonara has become a beloved favorite among home cooks.

Ingredients

Scale
  • 400g spaghetti
  • 150g diced pancetta or guanciale
  • 4 large eggs
  • 100g freshly grated Parmesan cheese
  • 1 tsp freshly cracked black pepper

Instructions

  1. Boil salted water in a large pot and cook spaghetti until al dente; reserve 1 cup of pasta water before draining.
  2. In a pan over medium heat, sauté pancetta until golden brown and crispy (about 5-7 minutes).
  3. In a bowl, whisk eggs, Parmesan cheese, and black pepper until well combined.
  4. Add hot drained spaghetti to the pan with pancetta off the heat; pour in egg mixture while tossing quickly to create a creamy sauce.
  5. If the sauce is too thick, gradually add reserved pasta water until desired creaminess is achieved.
  6. Serve immediately, garnishing with extra cheese and pepper if desired.
