  • 4 ripe peaches, chopped
  • 1 medium onion, diced
  • 1 cup dark brown sugar
  • 1/2 cup apple cider vinegar
  • 2 tsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 cinnamon stick
  • Salt and pepper to taste

Instructions

  1. Prepare peaches by washing and peeling them; chop into small chunks.
  2. In a medium saucepan over medium heat, sauté the diced onion and minced garlic until translucent (about 3-4 minutes).
  3. Add chopped peaches and brown sugar; stir until the sugar dissolves.
  4. Pour in apple cider vinegar and add grated ginger along with the cinnamon stick; bring to a gentle boil.
  5. Reduce heat and simmer uncovered for 30-40 minutes until thickened.
  6. Remove the cinnamon stick, cool the chutney, then transfer to sterilized jars for storage.
