  • 1 lb ribeye steak, sliced thinly
  • 1 medium yellow onion, sliced
  • 1 green bell pepper, sliced
  • 4 oz sharp provolone cheese, sliced
  • 4 soft hoagie rolls
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Slice ribeye against the grain into thin strips. Also, slice onions and green peppers.
  2. Heat olive oil in a skillet over medium heat. Add onions and bell peppers; sauté until onions are translucent (5–7 minutes).
  3. Push veggies to one side; add ribeye steak. Season with salt and pepper; cook until tender (3–5 minutes).
  4. Layer provolone cheese over the steak mixture; cover for 1–2 minutes to melt.
  5. Slice hoagie rolls open and stuff with cheesy steak mixture.
  6. Serve warm with your favorite sides.
