Description

Savor the taste of summer with these Piña Colada Popsicles, a delightful blend of creamy coconut milk and refreshing pineapple juice. Perfect for pool parties or lazy afternoons, these popsicles deliver a tropical escape in every bite. Easy to make and irresistibly flavorful, they bring a fun adult twist to a childhood favorite.

Ingredients

Scale
  • 1 cup full-fat coconut milk
  • 1 cup pure pineapple juice
  • 2 tablespoons honey (adjust to taste)
  • 1/2 cup fresh pineapple chunks
  • 1 tablespoon white rum (optional)

Instructions

  1. In a blender, combine coconut milk, pineapple juice, honey, and fresh pineapple chunks. Blend until smooth and creamy.
  2. Taste the mixture and add more honey if desired for sweetness.
  3. Pour the blended mixture into popsicle molds, leaving some space at the top for expansion.
  4. Insert popsicle sticks after about an hour of freezing when the mixture is slightly firm.
  5. Freeze for at least four hours or until solid.
  6. To remove popsicles, run warm water over the molds for a few seconds before serving.
