  • 1 cup fresh pomegranate seeds
  • 2 tbsp extra virgin olive oil

  • ½ tsp black pepper
  • 2 tbsp balsamic vinegar
  • ¼ cup feta cheese, crumbled (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the ends off the Brussels sprouts and remove any yellow leaves. Halve them for even roasting.
  3. In a large bowl, toss the halved sprouts with olive oil, salt, and pepper until well coated.
  4. Spread the sprouts on a baking sheet in a single layer and roast for 25-30 minutes or until golden brown and tender.
  5. Once out of the oven, immediately add pomegranate seeds and drizzle with balsamic vinegar.
  6. Serve warm; if desired, sprinkle feta cheese on top before serving.
